Haskap Muffins

Ingredients

For muffins
  • 1½ cups all-purpose flour
  • ½ teaspoon salt
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • 1⁄3 cup canola oil
  • 1 egg (beaten)
  • 1⁄3 cup milk
  • 1 cup fresh haskaps
For topping
  • ½ cup white sugar
  • 1⁄3 cup all-purpose flour
  • ¼ cup butter, cubed
  • 1½ teaspoons ground cinnamon

Instructions

Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners. Combine all the dry ingredients for muffins in a mixing bowl. Place canola oil in a 1 cup measuring cup, add beaten egg and enough milk to fill the cup. Mix wet ingredients into dry and gently fold in haskaps. Fill muffin cups to the top and sprinkle with crumb topping.

To make crumb topping

Mix together all topping ingredients with a fork until a nice crumb forms. Sprinkle over muffins before baking. Bake for 20–25 minutes, or until done.
