Soup recipes for the winter from Edible Idaho.

Sharp winds, shrinking days and mercury-dropping temperatures are not-so-gentle reminders that winter is underway. With each day demanding another layer, a thicker coat and eventually a scarf and hat, braving the outdoors feels more like a threat than an adventure.

During this frosty season, few things sound cozier than a blazing fire and a warm bowl of soup. Add crusty bread and a plate of gently dressed greens and you have yourself a meal. One slurp charges the body with warmth and triggers the image of friendly smiles greeting us at the door after a long, playful day in the snow.

Often when we think of soup, chicken noodle is the first that comes to mind, and one that we associate with that ultimate feeling of comfort. Virtually every family has some version of chicken noodle soup, but there is an unlimited supply of unique and rich soups that often go ignored.

We have asked a few of Idaho’s chefs to share their favorite soup recipes—the ones that bring them comfort during the chilly time of the year.
