Boise Co-op Cooking Class: Hearty Hare Stew
Rabbit is a sustainable and healthy meat. It has more protein than beef or chicken and is also a concentrated source of iron and minerals. It is one of the most environmentally-friendly meats. According to Slow Food USA, "rabbit can produce six pounds of meat on the same amount of feed and water it takes a cow to produce just one pound." They reproduce quickly and overall have a smaller carbon footprint on the earth.
Jess from Hen and Hare Microfarm will demonstrate a decadent yet straightforward rabbit dish that even novice cooks can master! This stew brings out the earthy flavor of the rabbit. It creates tender meat and lovely broth, and is perfect for fall and winter meals! Your first glass of wine will be provided in the class cost.
Hen and Hare is a locally owned and operated microfarm in South Boise. It doesn't take much to start producing even a little food for yourself, and with a little bit more, you can provide food for a community. Jess hopes her microfarm can inspire small-acreage owners to make the most of their land.
