The Haven: An Adventurous Food Truck
Winter, with all its holidays, snow days and sick days, invokes an intense desire for comfort food. Kellee Havens, owner of The Haven food bus in Ketchum, believes that every meal should be comforting, regardless of the season. This is evident in her ever-changing menu that’s altered frequently due to availability of ingredients and inspiration. Popular staples include pan-fried mac ‘n’ cheese, sliders and hearty salads, like the roasted Brussels sprouts and marinated kale salad.
Raised in Portland, Ore., with a family of homemade-food fanatics, Havens says her meals are “good, healthy and indulgent.” And a few other Portland traits have infiltrated Havens’ values: The food is almost always organic, many ingredients are sourced locally and seasonally, and each customer can alter the menu to suit his or her dietary needs. For example, if the menu boasts grilled steak sandwiches, then grilled steak can be substituted in the tacos. Or you can add spinach to the mac ‘n’ cheese. And though they may not be listed on the menu, there are always gluten-free options, such as adding a gluten-free grain to one of the soups.
Havens endeavors to keep prices manageable, at around $6 to $11, so customers can enjoy a great meal within a budget. This winter, the bus will have at least two winter soups (including one vegetarian or vegan and one meat option), a soup and sandwich combo and a nourishing salad.
The Haven—or, as many locals call it, “The Green Bus”—is operated by Havens and Caitlin Hartley and will be open this winter from noon to 2pm, Monday through Thursday. Weekends are typically reserved for private catering events. As a bonus, Havens and Hartley also stock refrigerators, which means the dynamic duo will cater to your personal tastes and cook for you in your home.
