Claudia Sánchez Mahedy, is the owner and publisher of Edible Idaho. She is energetic and passionate about local food and enjoys exploring farmers markets, hidden restaurants and leisurely combing through any one of her many cookbooks. She is a culinary instructor and food writer with a culinary degree from the Institute of Culinary Education in NYC.
