Shore Lodge’s Huckleberry Pancakes

Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 2 tablespoons sugar
  • 2 eggs, separated
  • 2 cups buttermilk
  • 1/4 cup butter, melted
  • 1 cup Idaho huckleberries

Instructions

In a large bowl, combine all dry ingredients well. In a separate bowl, mix egg yolks with buttermilk. In a third bowl, mix egg whites with melted butter. Combine wet mixtures. Pour wet mixture over dry mixture and incorporate, but don’t over mix. Gently fold in huckleberries. DO NOT USE ELECTRIC MIXER! Prepare pancakes on the griddle.
