Rub the rim of the glass with a wedge of orange and coat it with superfine sugar. Fill the glass with ice. In another glass, mix the rhubarb syrup, tequila and sparkling water.

Pour over the ice and garnish with a slice of orange.

  • 3 ounces rhubarb syrup*
  • 2 ounces good white tequila
  • Splash of sparkling water
  • 1 orange slice, for garnish
  • Superfine sugar, for coating the rim of the glass
