- Any kind of long slim peppers (spicy or not)
- 1 cup grated cheddar cheese
- 1 can white beans
- 1 cup prepared tomato salsa
- ½ cup chopped cilantro
Cut peppers in half and place on a baking sheet, cut side up. Mix filling ingredients together and spoon into peppers. You could try different kinds of beans, or use beef or chicken instead or in addition. Bake at 350°F for 20 minutes or until cheese is melted and pepper is heated through.
