March is the perfect time to re-affirm your healthy habits! Daily life can be hectic, and healthy meals are often the casualty. But, eating well does not have to be complicated or time consuming! During this class, taught by Registered Dietitian Pohley Richey, you will explore time saving meal prep ideas that fit into a Mediterranean diet, touted as one of the healthiest eating patterns. This class will show how to cook once and make multiple meals from healthy and delicious Mediterranean inspired foods like quinoa and roasted vegetables. For example, transforming batch cooked quinoa into a Lemony Skewered Chicken and Quinoa Salad with Roasted Vegetables, Quinoa Stuffed Peppers with Pine Nuts and Feta, and a Minestrone-style Quinoa Soup.
